-The Bigbite Offshore Crew will be at the Pompano Marin Flea Market again this year.  The dates are January 30th-31st.  This flea is one of the most enjoyable of the year as we get to see many of our customers again.  We hope for good weather and familiar faces.  Come by and say "hello"!

The crew of Bigbite Offshore will attending the International Miami Boat Show in the Miami Beach Convention Center.  This 4-day event runs from February 11th - 14th.  Be sure to stop by our booth in the "Big Game Room" to check out our new inventory of offshore fishing lures, rigs, and rods.  For more information on the show, visit their site at:

Fish Recipes...

 


Summertime Mahi Fajitas! During the summer months, when dolphin are numerous, you may find yourself becoming flat out sick of eating your catch.  When it gets to that point, it always nice to change things up a bit and enjoy your favorite fish in a different way.  The Bigbite Offshore crew has made this dish many times and it always pleases the crowd.  We hope you enjoy it as much as we do!

Ingredients:

  • Dolphin fillets cut into 3 inch long, 2 inch wide pieces
  • 1 red and 1 green pepper. Sliced into 3 inch long, 2 inch wide pieces
  • 1 yellow onion.  Sliced into 3 inch long, 2 inch wide pieces
  • Flour tortillas
  • Garlic Salt
  • Cayenne pepper
  • Fajita Seasoning
  • Sour cream
  • Cheese
  • Hot sauce

Directions:

  • Heat a pan w/ olive oil under medium heat and place all peppers and onions in the pan.  Sprinkle a generous amount of garlic salt and cayenne pepper.  Let simmer for 5 minutes.
  • Throw dolphin fillets, fajita seasoning, and a 1/2 cup of water into pan.  Stir to make sure it is evenly distributed.  Let simmer for 5 minutes.  Remove from heat.
  • Heat tortillas in microwave for 30 seconds.
  • Place dolphin mixture in each flour tortilla and serve with cheddar cheese, sour cream and hot sauce.

Pour an icy cold beverage and Enjoy!
